What the word organic covers on a pillow, and what it does not
This is the most useful thing to understand in natural bedding. Almost nobody explains it, because explaining it is inconvenient.
A pillow is at least two things: a cover, and whatever is inside it. A certificate can cover the fabric alone, the material alone, or both together. All three get described the same way in marketing.
The common move is to certify the outer fabric and then call the finished pillow organic. The claim is true of that one part. It is then left to stand for the whole thing. Learn to ask one question, "certified to what scope?", and most of the category answers differently than its headlines do.
A certificate is only worth what its scope line names, and the audit behind it happens in person, every year, following the certified fiber through to the finished product. So a brand that names its license and offers to send you the certificate is telling you something real. A logo with no number behind it is telling you something too.
What Avocado certifies and what it leaves fixed
Avocado started in 2016 as a mattress company and grew into a full organic home catalog with 14 of its own shops. It is a certified B Corporation. Its mattresses are made in its factory in Fullerton, California. Its latex and kapok pillows are made in Tecate, Mexico, which their own pages disclose.

Their Green, Molded and Talalay pillows carry finished-product Global Organic Textile Standard and OEKO-TEX Class 1 certificates with the numbers printed on the page, and the Green and Molded pillows add MADE SAFE and GREENGUARD Gold. Printing the number is the habit everyone should copy.
Two things to weigh against that.
Two adjustable pillows. The Green Pillow, shredded latex and kapok, opens and comes with an extra bag of material, and its travel-size Mini opens the same way. The rest of the range is fixed, including the Talalay and down options. If height is your problem, most of their catalog cannot help.
No wool-filled pillow. Wool appears only in the Grand Luxe cover. Anyone who sleeps hot and wants wool, the one material that takes up moisture before your face feels it, has to shop elsewhere.

What we will not claim, and why it matters here
Our latex is certified to OEKO-TEX Standard 100 at Class 1, the strictest tier there is, the one used for products made for babies. It tests the finished material that touches your face.
The Global Organic Latex Standard (GOLS) is a different thing and worth knowing apart from this one: it certifies that the latex is made with at least 95 percent certified organic raw latex, which is a different question from the OEKO-TEX test. Ask any brand which of the two it holds, and ask for the number. That is the same standard worth applying to everyone's pages, including Avocado's and ours.

Who should buy which
Avocado's strength is size: the broadest certified range from a large company, a B Corporation, and shops you can walk into. But only the Green Pillow and its Mini adjust, so on the rest you pick your height at checkout and keep it.
