Most sheet complaints are not about the cloth. They are about a corner that pops off at four in the morning, so ours has a 15 inch pocket with elastic all the way round.
Everything here is 300 thread count long-staple organic cotton sateen, cut and sewn by hand in New Jersey from Texas-grown cotton, certified organic under licence GOTS-10229. Twin, full, queen and king. Two numbers decide whether you will be happy with a set of sheets, and neither of them is thread count. The first is pocket depth, because a fitted sheet that will not reach around your mattress is a sheet you fight every week. Ours is 15 inches with elastic all the way round. The second is staple length, because long fibers are what stop a cloth pilling after a year of washing.

The single most common complaint about fitted sheets has nothing to do with the fabric. It is that the sheet will not stay on, and the reason is almost always arithmetic.

Pillow tops, hybrids and thick toppers all add height, and a mattress that once measured nine or ten inches now often measures well past that.

Plenty of sheets are still cut to a pocket that suited a thinner mattress, and the packaging rarely prints the number anywhere obvious.

It goes on, which is the trap. There is nothing spare underneath, so the whole thing is held on by tension rather than by the fit.

One corner lifts, and once a corner has gone the rest follows within a few minutes. You wake up on the mattress rather than on the sheet.
Measure your mattress from the top surface down to where it meets the frame, including any topper, and buy a pocket deeper than that number. Ours is 15 inches, which covers most beds with room to spare.
Two things hold a fitted sheet in place. The first is having enough cloth to tuck under the mattress rather than just to reach it. The second is where the elastic sits. Many sheets gather it at the four corners only, so the long sides have nothing holding them and the sheet creeps up the mattress as you move.
Ours runs elastic around the entire opening. That spreads the tension along the sides instead of concentrating it at four points, which is what stops the creeping in the first place and what keeps the top surface flat when you get in.
A cotton fiber's length decides how the yarn behaves. Short fibers leave ends sticking out, and those ends work loose in the wash, ball up, and become the pilling you feel under your hand after a year. Long-staple fiber tucks its ends into the body of the yarn, so the surface stays smooth.
It is stronger too, which matters most for the fitted sheet. That piece gets stretched over a mattress a couple of hundred times a year, and it is the one that gives out first in almost every set. Ours is long-staple organic cotton in a sateen weave, which puts more of the yarn on the surface and gives the drape without a chemical finish.
Machine wash warm or cool and tumble on low or hang to dry. Sateen softens with washing rather than degrading, so these get better for a long time before they start to age, and the one thing that interrupts that is fabric softener. Softener works by coating the fibers, which reduces how well the cloth breathes and undoes the reason you bought cotton.
The sheets arrive in the natural undyed colour of the cotton, a soft off-white rather than a bright one.
Four of these decide whether the sheets are still good in three years, and only one of them appears on the front of most packaging.

Cotton moves a little in its first washes, which is why the pocket is cut at 15 inches rather than at the number we would need if nothing ever changed. Wash cool and dry on low and the movement stays small. High heat in a dryer is what causes the shrinkage people complain about.
These are the natural undyed colour of the cotton, a soft off-white rather than a bright white. Dyeing is one of the heaviest steps in finishing a textile and bleaching to a true white is heavier still, so the cloth here is left the colour it grew.
