Two different questions, and most brands answer only the first. A pillow that opens with nothing to put back in it goes flat on the same schedule as one that never opened.
Adjustability runs in both directions, and taking material out is the half most people use. Ours arrive about a third fuller than most owners keep them. so the first thing an owner usually does is take out roughly 30 percent and set the height to their own shoulder.
